Chimayo chile is considered superior since it is from a small town in northern NM and not as plentiful. If you remember you ordered hot chile for local pick up. But then told me you were in Kansas so I canceled that purchase and you were refunded. Then you bought the medium hot. Because of the snafu we upgraded to the Chimayo medium hot chile and it will be delicious for tamales.
